If this first week is any indication of how 2021 will look, ghost kitchens will continue to dominate the restaurant space. There has been a lot of activity in ghost kitchens right out of the gate! A handful of big news was released, including Wow Bao’s expanding partnership with Franklin Junction and Capriotti’s acquisition of Wing Zone. Muscle Maker also continues to spread their ghost kitchens as rapidly as ever. The articles from this week are stellar as well. One interesting interview, “From Bricks to Clicks”, describes the not-often-talked-about dimension of operating a ghost kitchen.
