Expansion is the big theme this week. Brands that have already made their “ghost kitchen footprint,” like FAT Brands, Dickey’s BBQ and Muscle Maker Grill, are expanding their operations under the ghost kitchen model. Eight months ago, some people thought that ghost kitchens might be a temporary option to sustain restaurant brands. Now the defense has switched to offense, and brands are reporting record-breaking numbers operating ghost kitchens.
